Short days, snowy nights, hot chocolate by the fire, holidays, fuzzy socks. Many things come to mind when thinking about Winter, and now fresh local veggies can be one of those things. LFFC started the Winter share in 2011 in effort to support our local farmers through this tough season and provide this amazing community with organic vegetables all year round. Winter CSA has quickly become a very important season for our farmers with over 100 of our organic farmers relying on the CSA to sustain their organic farming practices and families. Many of our farmers use greenhouses to ensure a variety of greens through the snowy months. Wood stoves are used in some of these greenhouses as a sustainable way to control the climate. This is by far the toughest harvesting season for our farmers – with the elements against them, needing to closely monitor storage crops in root cellars, veggies growing more slowly, crops giving less yield, and the time and efforts given to the greenhouse crops. With all this work, you might ask: is it worth it? Absolutely! Our farmers are dedicated to providing the best organic vegetables and we’re forever grateful to them.
Winter calls for slow cooking weekends, soups, stocks, and hearty dishes that comfort and nourish. Winter CSA veggies include some hardy staples and unique favorites such as: Potatoes, Carrots, Cabbage, Leeks, Brussels Sprouts, Celeriac, Sweet Potatoes, Watercress, Microgreens, Young Spinach, Baby Greens, Celery, Rutabagas, Turnips, Heirloom Radish Mix, Sunchokes, Horseradish, Winter Squash, Pumpkins, Onions, Belgian Endive, Radicchio, and Cauliflower.
